How To Make Delicious Carrot Cake Recipe Cupcakes

Ingredients:

For the cupcakes:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots (about 3 medium carrots)
  • 1/2 cup chopped walnuts (optional)

For the cream cheese frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions:

1. Preheat oven to 350°F (180°C). Line a muffin tin with cupcake liners and set aside.

2. In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

3. In another bowl, whisk together oil, eggs, and vanilla until well combined. Add grated carrots and mix until evenly distributed.

4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts, if using.

5. Using an ice cream scoop or spoon, divide the batter evenly among the prepared muffin cups.

6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

7. While the cupcakes are cooling, make the cream cheese frosting. Beat cream cheese and butter together until light and fluffy. Gradually add powdered sugar and vanilla, beating until smooth.

8. Once the cupcakes have cooled completely, frost them with the cream cheese frosting. If desired, top with additional chopped walnuts.
