- 1 tsp mustard seeds

- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tbsp vegetable oil
- 1 tbsp jaggery or brown sugar
- 1 tbsp tamarind paste or lemon juice
- Salt to taste
Instructions
Now that you have gathered all the ingredients, follow these simple steps to make beetroot chutney:- Heat a tablespoon of vegetable oil in a pan over medium heat.
- Add mustard seeds and cumin seeds to the pan and let them splutter.
- Add chopped onions, minced garlic, and grated ginger to the pan and sauté until the onions turn translucent.
- Add chopped beetroot to the pan and sauté for about 5 minutes.
- Add coriander powder, turmeric powder, red chilli powder, and salt to the pan and mix well.
- Cover the pan and cook the beetroot for 10-15 minutes, stirring occasionally, until it is tender.
- Add jaggery or brown sugar and tamarind paste or lemon juice to the pan and mix well.
- Remove the pan from the heat and let the mixture cool down.
- Transfer the mixture to a blender or food processor and blend until it forms a smooth paste.
- If the chutney is too thick, add a little water to adjust the consistency.
- Taste the chutney and adjust the seasoning as per your liking.
- Transfer the beetroot chutney to a bowl and serve it as a dip or spread.
