Ingredients

For the oatmeal cookies:

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
For the filling:
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup confectioners' sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup marshmallow fluff

Instructions

Step 1: Make the oatmeal cookies

1. Preheat the oven to 350°F. Line a baking sheet with parchment paper. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 3. In a large bowl, using an electric mixer, beat the butter and both sugars until light and fluffy, about 2-3 minutes. 4. Add the egg and vanilla extract to the butter mixture and beat until well combined. 5. Gradually add the flour mixture to the butter mixture and beat until just combined. 6. Stir in the rolled oats until evenly distributed. 7. Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart. 8. Bake for 10-12 minutes, or until the cookies are lightly browned around the edges and set in the center. 9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 2: Make the filling

1. In a large bowl, using an electric mixer, beat the butter until light and fluffy, about 2-3 minutes. 2. Add the confectioners' sugar, salt, and vanilla extract to the butter and beat until well combined. 3. Add the marshmallow fluff to the butter mixture and beat until the filling is light and fluffy, about 2-3 minutes.

Step 3: Assemble the whoopie pies

1. Once the cookies have cooled completely, match them up in pairs of similar size. 2. Using a spoon or pastry bag, spread or pipe a generous amount of filling onto the bottom of one cookie in each pair. 3. Place the other cookie on top of the filling and press down gently to create a sandwich. 4. Repeat with the remaining cookies and filling.
