1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners. 2. In a medium bowl, whisk together the flour, baking powder, and salt. 3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. 4. Add the flour mixture to the butter mixture in three parts, alternating with the milk and lemon juice. Stir in the lemon zest and vanilla extract. 5. Divide the batter evenly among the muffin cups, filling each about 3/4 full. 6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. 7. Allow the cupcakes to cool in the pan for 5 minutes before removing them to a wire rack to cool completely. 8. While the cupcakes are cooling, make the frosting. In a large bowl, cream the butter until light and fluffy. Gradually add the powdered sugar, beating well after each addition. Stir in the lemon juice and zest. 9.
