Instructions

Step 1: Prepare the Batter

Step 2: Ferment the Batter

Cover the batter and let it rest for 30 minutes to an hour. The batter will ferment and rise during this time.

Step 3: Prepare the Steamer

Pour the batter into the greased plate or dhokla mold. Place the plate or mold in the steamer and steam for 10-15 minutes or until the dhokla is cooked. To check if the dhokla is cooked, insert a toothpick in the center. If it comes out clean, the dhokla is cooked.

Step 6: Prepare the Tempering

Heat oil in a pan. Add mustard seeds and let them crackle. Add sesame seeds, green chilies, and sauté for a few seconds. Switch off the flame and add water to the pan. Add sugar and salt and mix well.

Step 7: Cut the Dhokla

Once the dhokla is cooked, take it out of the steamer and let it cool for a few minutes. Cut the dhokla into square or diamond-shaped pieces.
