For the dough:- 450g strong white bread flour
- 75g caster sugar
- 7g sachet fast-action dried yeast
- 1 tsp salt
- 250ml warm milk
- 1 large egg, beaten
- 50g unsalted butter, melted
- 75g unsalted butter, softened
- 75g light brown sugar
- 2 tbsp ground cinnamon
- 50g unsalted butter, softened
- 100g cream cheese, softened
- 200g icing sugar
- 1 tsp vanilla extract
Instructions
1. In a large mixing bowl, combine the flour, sugar, yeast, and salt. 2. In a separate bowl, whisk together the warm milk, beaten egg, and melted butter. 3. Pour the wet ingredients into the dry ingredients and mix until a dough forms. 4. Knead the dough on a lightly floured surface for 5-8 minutes until it becomes smooth and elastic. 5. Place the dough in a greased bowl, cover with a tea towel, and leave to rise in a warm place for about an hour, or until it has doubled in size. 6. While the dough is rising, prepare the filling. In a bowl, mix together the softened butter, light brown sugar, and ground cinnamon until it becomes a smooth paste. 7. Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. 8. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle shape, about 40cm x 30cm. 9. Spread the cinnamon filling over the dough, leaving a small border around the edges. 10. Roll the dough up tightly from the long side, and then cut it into 12 equal pieces. 11. Place the rolls in a greased baking dish, cover with a tea towel, and leave to rise for another 30 minutes. 12. Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through. 13. While the rolls are baking, prepare the cream cheese frosting. In a bowl, mix together the softened butter, cream cheese, icing sugar, and vanilla extract until it becomes a smooth and creamy consistency. 14.
