Before we start, let's take a look at the ingredients you will need to make this delicious ginger cake:- 225g self-raising flour
- 1 tsp bicarbonate of soda
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp ground mixed spice
- 100g unsalted butter
- 100g dark muscovado sugar
- 3 tbsp golden syrup
- 2 medium eggs
- 150ml milk
Instructions
Now that we have everything we need, let's get started on making this delicious ginger cake:- Preheat your oven to 160°C (fan)/180°C/gas mark 4.
- Sift the flour, bicarbonate of soda, ginger, cinnamon, and mixed spice into a large mixing bowl.
- Add the butter and rub it into the dry ingredients until the mixture resembles fine breadcrumbs.
- Add the sugar and mix well.
- In a separate bowl, whisk together the golden syrup, eggs, and milk.
- Pour the wet ingredients into the dry ingredients and mix well until you have a smooth batter.
- Pour the batter into a greased and lined 23cm round cake tin.
- Bake in the preheated oven for approximately 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean.
- Remove the cake from the oven and allow it to cool in the tin for 10 minutes.
- Turn the cake out onto a wire rack and allow it to cool completely.
- Once the cake is cool, you can dust it with icing sugar or decorate it with your favourite frosting.
- Slice the cake and serve it with a dollop of whipped cream, if desired.
