Beat in the eggs, one at a time, mixing well after each addition. 4. Add the sifted flour, baking powder, milk, and vanilla extract to the bowl and mix until well combined. 5. Divide the cake mixture evenly between the two prepared tins and level the surface of each with the back of a spoon. 6. Bake in the preheated oven for 20-25 minutes or until the cakes are golden brown and spring back when lightly pressed in the center. 7. Remove from the oven and leave to cool in the tins for 5 minutes before turning out onto a wire rack to cool completely. 8. To make the filling, beat together the softened butter, sifted icing sugar, and vanilla extract until light and fluffy. 9. Once the cakes have completely cooled, spread the strawberry jam onto one of the cakes. 10. Spread the buttercream over the jam, making sure to spread it evenly. 11. Place the second cake on top of the filling, pressing down gently. 12. Sprinkle with a little icing sugar, and serve.
