Instructions

1. Preheat your oven to 150°C (130°C fan)/300°F/gas mark 2. 2. Grease and line a 20cm/8in round cake tin with baking paper. 3. In a large bowl, cream together the butter and sugar until light and fluffy. 4. Beat in the eggs one at a time. 5. Sift in the flour, baking powder, and mixed spice and fold in until fully combined. 6. Add the cherries, mixed peel, sultanas, raisins, almonds, and brandy and mix until evenly distributed. 7. Spoon the mixture into the prepared tin and level the surface with a spatula. 8. Bake in the preheated oven for 2-2.5 hours, or until a skewer inserted into the centre of the cake comes out clean. 9. Leave the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.

Icing

1. Dust a clean work surface with icing sugar and roll out the marzipan to fit the top of your cake. 2. Place the marzipan on top of the cooled cake and smooth down gently. 3. Dust the work surface with more icing sugar and roll out the icing to fit the top of your cake. 4. Brush the marzipan with water and place the icing on top. 5. Smooth down gently and decorate as desired.
