Instructions

1. Preheat the oven to 180°C. 2. Heat the olive oil in a large casserole dish over medium-high heat. 3. Add the beef and cook until browned on all sides, then remove from the pan and set aside. 4. Add the onion, garlic, carrots, and celery to the same pan and cook until softened. 5. Stir in the tomato paste and cook for another 2 minutes. 6. Return the beef to the pan and pour in the beef stock. 7. Add the thyme sprigs and season with salt and pepper. 8. Bring to a simmer, then cover and transfer to the oven. 9. Bake for 2 hours, or until the beef is tender and the sauce has thickened. 10. While the beef is cooking, make the dumplings. 11. In a large bowl, mix together the flour, butter, cheddar, thyme, salt, and pepper until the mixture resembles breadcrumbs. 12. Stir in the milk to form a soft dough. 13. When the beef is ready, remove the casserole dish from the oven and increase the temperature to 200°C. 14. Roll the dough into 8-10 balls and place on top of the beef mixture. 15. Return the dish to the oven and bake for a further 20-25 minutes, or until the dumplings are golden and cooked through. 16. Serve hot, garnished with fresh thyme leaves.
