- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (14 ounces) light coconut milk
- 1 red bell pepper, chopped
- 2 cups chopped kale
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes. 2. Add the curry powder, cumin, coriander, turmeric, cinnamon, ginger, and cayenne pepper to the saucepan and cook, stirring constantly, for 1 minute. 3. Add the diced tomatoes, chickpeas, and coconut milk to the saucepan and bring to a simmer. Reduce the heat to low and simmer, uncovered, for 10 minutes. 4. Add the red bell pepper and kale to the saucepan and simmer for an additional 10 minutes, or until the vegetables are tender. 5.
