Chicken Lombardy Recipe

For the chicken:- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 4 tbsp olive oil
- 1 tbsp butter
- 1/2 cup sliced mushrooms
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 4 slices provolone cheese
Instructions
1. Preheat the oven to 375°F. 2. To make the breadcrumb mixture, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper in a shallow dish. 3. Place the beaten eggs in another shallow dish, and the flour in a third shallow dish. 4. Dip each chicken breast in the flour, shaking off any excess, then dip it in the egg mixture and coat it in the breadcrumb mixture. Repeat with the remaining chicken breasts. 5. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown and cooked through. 6. Transfer the chicken breasts to a baking dish and bake for 10-15 minutes, or until cooked through. 7. While the chicken is baking, make the mushroom sauce. Melt the butter in a small saucepan over medium heat. Add the sliced mushrooms and cook for 2-3 minutes, or until softened. 8. Add the chicken broth to the saucepan and bring to a simmer. Cook for 2-3 minutes, or until slightly reduced. 9. Add the heavy cream and Parmesan cheese to the saucepan and stir until the cheese is melted and the sauce is smooth. 10. Remove the chicken from the oven and top each breast with a slice of provolone cheese. Return to the oven and bake for another 2-3 minutes, or until the cheese is melted and bubbly. 11.
