Recipe For Delicious Christmas Cake

To make this delicious Christmas cake, you will need the following ingredients:- 1 kg mixed dried fruit
- 250g unsalted butter
- 250g brown sugar
- 5 large eggs
- 250g all-purpose flour
- 2 tsp baking powder
- 2 tsp mixed spice
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 cup brandy
Instructions
1. Preheat your oven to 160°C. 2. In a large mixing bowl, add the mixed dried fruit, brandy and mix well. Cover and let it soak overnight. 3. On the day of baking, grease a 23cm round cake tin with butter and line it with baking paper. 4. In a separate bowl, cream the butter and brown sugar together until light and fluffy. 5. Add the eggs, one at a time, and beat well after each addition. 6. In another bowl, sift the flour, baking powder, mixed spice, cinnamon and nutmeg together. 7. Add the dry ingredients to the wet mixture and beat until well combined. 8. Add the soaked mixed fruit (including any liquid) into the batter and mix well. 9. Pour the batter into the prepared cake tin and smooth the top with a spatula. 10. Bake the cake in the preheated oven for 3 hours, or until a skewer inserted into the middle comes out clean. 11. Remove the cake from the oven and let it cool in the tin for 10 minutes. 12. Turn the cake out onto a wire rack and let it cool completely.Nutrition
