- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 10-12 corn tortillas
- 1 avocado, diced
- 1/2 cup shredded cheese
- 1/2 cup chopped fresh cilantro
- Lime wedges
- Hot sauce (optional)
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the onions and cook until they are soft and translucent, about 5 minutes. 2. Add the garlic and cook for an additional minute. 3. Add the red and yellow bell peppers to the skillet and cook for 3-4 minutes, until the peppers are slightly softened. 4. Add the black beans, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine. 5. Reduce the heat to medium-low and let the mixture cook for an additional 5-7 minutes, stirring occasionally. 6. While the bean mixture is cooking, heat the tortillas in a dry skillet over medium heat, flipping occasionally until they are warm and pliable. 7.
