Maid Of Honour Recipe
Introduction
Maid of Honour is a traditional English pastry that has been enjoyed for centuries. It is believed that the tart was first made for Anne Boleyn, who was a lady-in-waiting to Queen Catherine of Aragon. The tart was so delicious that the Queen named it Maid of Honour after Anne. The pastry is made with a creamy curd cheese filling, which is flavoured with lemon zest and baked in a shortcrust pastry case. The tart is perfect for afternoon tea or as a dessert after dinner.Ingredients
- For the pastry:
- 225g plain flour
- 100g unsalted butter, chilled and diced
- 1 egg yolk
- 2-3 tbsp cold water
- For the filling:
- 200g full-fat cream cheese
- 100g caster sugar
- 2 large eggs, beaten
- 1 lemon, zest and juice
- 1 tsp vanilla extract
- icing sugar, for dusting
Instructions
- Preheat the oven to 180°C/160°C fan/gas mark 4.
- To make the pastry, put the flour and butter into a food processor and pulse until the mixture resembles fine breadcrumbs.
- Add the egg yolk and 2 tbsp of cold water, and pulse until the mixture comes together to form a ball of dough. If the mixture is too dry, add another tablespoon of water.
- Wrap the pastry in cling film and chill in the fridge for at least 30 minutes.
- Roll out the pastry on a floured surface and use it to line a 23cm tart tin. Trim the edges and prick the base with a fork.
- To make the filling, beat the cream cheese and sugar together until smooth.
- Add the beaten eggs, lemon zest and juice, and vanilla extract, and mix until well combined.
- Pour the filling into the pastry case and bake for 25-30 minutes, or until the filling is set and golden brown.
- Leave the tart to cool in the tin for 10 minutes, then remove it from the tin and place it on a wire rack to cool completely.
- Dust the tart with icing sugar before serving.
