Introduction

Maid of Honour is a traditional English pastry that has been enjoyed for centuries. It is believed that the tart was first made for Anne Boleyn, who was a lady-in-waiting to Queen Catherine of Aragon. The tart was so delicious that the Queen named it Maid of Honour after Anne. The pastry is made with a creamy curd cheese filling, which is flavoured with lemon zest and baked in a shortcrust pastry case. The tart is perfect for afternoon tea or as a dessert after dinner.

Ingredients

  • For the pastry:
  • 225g plain flour
  • 100g unsalted butter, chilled and diced
  • 1 egg yolk
  • 2-3 tbsp cold water
  • For the filling:
  • 200g full-fat cream cheese
  • 100g caster sugar
  • 2 large eggs, beaten
  • 1 lemon, zest and juice
  • 1 tsp vanilla extract
  • icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C/160°C fan/gas mark 4.
  2. To make the pastry, put the flour and butter into a food processor and pulse until the mixture resembles fine breadcrumbs.
  3. Add the egg yolk and 2 tbsp of cold water, and pulse until the mixture comes together to form a ball of dough. If the mixture is too dry, add another tablespoon of water.
  4. Wrap the pastry in cling film and chill in the fridge for at least 30 minutes.
  5. Roll out the pastry on a floured surface and use it to line a 23cm tart tin. Trim the edges and prick the base with a fork.
  6. To make the filling, beat the cream cheese and sugar together until smooth.
  7. Add the beaten eggs, lemon zest and juice, and vanilla extract, and mix until well combined.
  8. Pour the filling into the pastry case and bake for 25-30 minutes, or until the filling is set and golden brown.
  9. Leave the tart to cool in the tin for 10 minutes, then remove it from the tin and place it on a wire rack to cool completely.
  10. Dust the tart with icing sugar before serving.
