For this recipe, you will need the following ingredients:- 2 onions, finely chopped
- 4 garlic cloves, crushed
- 1 thumb-sized piece of ginger, peeled and grated
- 2 red chili peppers, finely chopped
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tbsp curry powder
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tsp turmeric
- 1 can of chopped tomatoes
- 1 can of coconut milk
- 500g chicken breast or thigh fillets, diced
- 2 tbsp fresh coriander, chopped
- Salt and pepper, to taste
Instructions
1. In a large pot, heat the olive oil over medium-high heat. 2. Add the onions and cook until they are translucent, stirring occasionally. 3. Add the garlic, ginger, and chili peppers and cook for another 2-3 minutes. 4. Add the tomato paste, curry powder, cumin, coriander, and turmeric and cook for another minute. 5. Add the can of chopped tomatoes and coconut milk and stir until well combined. 6. Add the diced chicken to the pot and stir to coat in the sauce. 7. Reduce the heat to medium and let the curry simmer for 20-25 minutes, or until the chicken is cooked through. 8. Season the curry with salt and pepper to taste. 9.
