Introduction

Pork pies are a traditional British snack that has been enjoyed for centuries. They are savory pastries filled with seasoned pork and are perfect for picnics, parties, or just as a snack. Making pork pies from scratch may seem daunting, but it is surprisingly simple. In this article, we will guide you through the process of making delicious pork pies at home.

Ingredients

For the pastry:
  • 225g plain flour
  • 100g butter
  • 50ml cold water
  • 1 egg, beaten
  • Pinch of salt
For the filling:
  • 500g pork shoulder, minced
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

1. Make the pastry

In a large mixing bowl, combine the flour and salt. Add the butter and rub it in with your fingers until the mixture resembles breadcrumbs. Gradually add the cold water, mixing until the dough comes together. Knead the dough on a floured surface until it becomes smooth.

2. Make the filling

In a separate bowl, combine the minced pork, onion, garlic, thyme, sage, salt, and pepper. Mix well until all the ingredients are evenly distributed.

3. Assemble the pies

Preheat the oven to 180°C. Roll out the pastry on a floured surface until it is 1/4 inch thick. Use a pastry cutter to cut out circles of pastry, large enough to fit into the bottom of a muffin tin. Press the circles into the bottom of the muffin tin, making sure the edges are pressed firmly against the sides. Fill each pastry case with the pork mixture, making sure to press down the filling to eliminate any air pockets. Roll out more pastry and cut out circles to fit the top of the pies. Brush the edges of the pastry with beaten egg and place the pastry lid on top. Use a fork to crimp the edges and make a small hole in the center of each pie to allow the steam to escape.

4. Bake the pies

Bake the pies in the preheated oven for 25-30 minutes or until the pastry is golden brown. Remove from the oven and allow to cool slightly in the tin before transferring to a wire rack to cool completely.
