- 1 tablespoon of olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup of chopped mushrooms
- 1 24-ounce jar of marinara sauce
- 1 cup of grated mozzarella cheese
- 1 cup of grated parmesan cheese
- 1/4 cup of chopped fresh basil
- Salt and pepper to taste
Instructions
1. Preheat the oven to 375 degrees Fahrenheit. 2. Cook the pasta according to the package directions, but cook it for 1-2 minutes less than the recommended time. Drain the pasta and set it aside. 3. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until it is translucent. 4. Add the garlic, red bell pepper, yellow bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender. 5. Add the jar of marinara sauce to the skillet and stir to combine. 6. Add the cooked pasta to the skillet and toss with the sauce and vegetables. 7. Add half of the mozzarella cheese and half of the parmesan cheese to the skillet and stir to combine. 8. Transfer the pasta mixture to a 9x13 inch baking dish. 9. Sprinkle the remaining mozzarella and parmesan cheeses over the top of the pasta. 10. Bake for 20-25 minutes or until the cheese is melted and the pasta is heated through. 11.
