Ingredients

To make pambazos, you will need the following ingredients:
  • 6 bread rolls
  • 1 cup of guajillo sauce
  • 3 potatoes
  • 1/2 lb of chorizo
  • 1/2 onion, chopped
  • 1 can of refried beans
  • 1/2 head of lettuce, chopped

Instructions

Guajillo Sauce

1. Toast the guajillo peppers in a dry skillet over medium heat until they become fragrant, around 2-3 minutes. 2. Add the toasted guajillo peppers to a saucepan with enough water to cover them and let them simmer for around 10 minutes or until they soften. 3. Once the guajillo peppers are soft, drain the water and add them to a blender along with the garlic cloves, onion, oregano, and chicken broth. 4. Blend the mixture until it becomes smooth. 5. Heat the vegetable oil in a saucepan over medium heat and add the guajillo sauce. 6. Let the sauce simmer for around 10 minutes, stirring occasionally. 7. Add salt to taste.

Pambazos

1. Peel and dice the potatoes into small cubes. 2. Boil the potato cubes in salted water until they are soft, around 15 minutes. 3. In a skillet over medium heat, cook the chorizo and onion until the chorizo is fully cooked and the onion is translucent. 4. Add the cooked potatoes to the chorizo mixture and stir well. 5. Heat the refried beans in a separate saucepan over medium heat. 6. Preheat the oven to 350°F. 7. Cut the bread rolls in half and remove some of the bread from the inside to make room for the filling. 8. Dip each bread roll into the guajillo sauce until it is fully coated. 9. In a separate skillet over medium heat, add the vegetable oil and fry the bread rolls until they are crispy on the outside. 10. Once the bread rolls are done, place them on a baking sheet lined with parchment paper. 11. Fill each bread roll with the potato and chorizo mixture, refried beans, chopped lettuce, and crumbled queso fresco. 12.
