Slow Cooker Curry Recipe

- 1/2 tsp salt
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 cups frozen peas
- 1/4 cup fresh cilantro, chopped
Instructions
1. In a large skillet, heat some oil over medium-high heat. Add the chicken pieces and brown them on all sides. Transfer the chicken to the slow cooker. 2. Add the diced onion to the skillet and sauté until softened, about 5 minutes. Add the garlic and ginger and sauté for an additional 2 minutes. 3. Add the curry powder, cumin, coriander, turmeric, cayenne pepper, cinnamon, cardamom, and cloves to the skillet. Stir until the spices are fragrant, about 1 minute. 4. Pour the spice mixture over the chicken in the slow cooker. 5. Add the diced tomatoes (with their juice) and coconut milk to the slow cooker. Stir everything together. 6. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. 7. About 30 minutes before serving, add the frozen peas to the slow cooker and stir everything together. 8.
