- 2 tsp vanilla extract
- 1 cup brewed coffee, cooled
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tbsp cocoa powder
- 2 tbsp brewed coffee, cooled
- 1 tsp vanilla extract
- Chocolate shavings for decoration (optional)
Instructions
For the cake:
1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. 2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. 3. In a separate mixing bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract. 4. Add the wet ingredients to the dry ingredients and mix until well combined. 5. Add the brewed coffee and mix until smooth. 6. Pour the batter equally into the prepared cake pans. 7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. 8. Let the cakes cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.For the frosting:
1. In a large mixing bowl, beat the softened butter until light and fluffy. 2. Add the powdered sugar, cocoa powder, brewed coffee, and vanilla extract. Mix until well combined. 3. Beat the frosting for 2-3 minutes until light and fluffy.Assembly:
1. Place one cake layer on a serving plate. 2. Spread a generous amount of frosting on top of the cake layer. 3. Place the second cake layer on top of the frosting. 4. Spread a thin layer of frosting on the top and sides of the cake (crumb coat). 5. Refrigerate the cake for 30 minutes to set the crumb coat. 6.
