Aero Mint Cheesecake Recipe

For the crust:- 1 1/2 cups of crushed chocolate digestive biscuits
- 1/2 cup of melted butter
- 3 packs of cream cheese, softened
- 1 cup of sugar
- 3 eggs
- 1 tsp of vanilla extract
- 1/2 cup of Aero Mint chocolate, melted
- 1/2 cup of sour cream
- 1 cup of Aero Mint chocolate, melted
- 1/4 cup of heavy cream
Instructions
Step 1: Preparing the crust
In a mixing bowl, combine the crushed chocolate digestive biscuits and melted butter. Mix well until the mixture resembles wet sand. Transfer the mixture into a 9-inch springform pan and press it down firmly using your hands or the back of a spoon. Place the pan in the fridge to chill while you prepare the filling.Step 2: Making the filling
Preheat your oven to 325°F. In a large mixing bowl, beat the cream cheese and sugar together using an electric mixer until smooth and creamy. Add in the eggs, one at a time, and beat well after each addition. Mix in the vanilla extract and melted Aero Mint chocolate until well combined. Lastly, stir in the sour cream until everything is well incorporated.Step 3: Baking the cheesecake
Take the crust out of the fridge and pour the filling over it. Smooth out the top with a spatula.
