Gluten Free Mince Pie Recipe

For the pastry:- 200g gluten-free flour
- 100g butter, chilled and cubed
- 1 egg yolk
- 1-2 tbsp cold water
- 400g mixed dried fruit
- 50g chopped almonds
- 1 apple, peeled, cored and grated
- 1 orange, zest and juice
- 1 lemon, zest and juice
- 1 tsp mixed spice
- 100g soft brown sugar
- 100g suet (vegetarian or beef)
Instructions
Step 1: Make the pastry – In a large mixing bowl, combine the gluten-free flour and butter. Rub the butter into the flour until it resembles breadcrumbs. Add the egg yolk and 1 tbsp of cold water, and mix until the dough comes together. If the dough is too dry, add another tablespoon of water. Wrap the dough in cling film and chill in the fridge for at least 30 minutes. Step 2: Make the mincemeat – In a large mixing bowl, combine the mixed dried fruit, chopped almonds, grated apple, orange zest and juice, lemon zest and juice, mixed spice, soft brown sugar, and suet. Mix until all the ingredients are well combined. Step 3: Preheat the oven to 200°C/180°C fan/gas mark 6. Step 4: Roll out the pastry – Remove the pastry from the fridge and roll it out on a floured surface to a thickness of about 3mm. Cut out circles using a pastry cutter that is slightly larger than the holes in your muffin tin. Place the circles in the muffin tin. Step 5: Fill the pies – Add a spoonful of mincemeat to each pastry case. Cut out smaller circles of pastry to make the lids for the pies. Place the lids on top of the mincemeat and press the edges of the pastry together to seal. Step 6: Bake the pies – Brush the tops of the pies with a little milk or beaten egg. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown. Step 7: Serve and enjoy – Remove the pies from the oven and allow them to cool for a few minutes before transferring them to a wire rack to cool completely.
