For the base:- 300g digestive biscuits
- 150g unsalted butter
- 500g full-fat cream cheese
- 200g caster sugar
- 200g Maltesers
- 300ml double cream
- 1 tsp vanilla extract
- 100g Maltesers
Instructions
Step 1: Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Step 2: To make the base, crush the digestive biscuits into small pieces. You can do this by either using a food processor or by placing the biscuits in a plastic bag and crushing them with a rolling pin. Step 3: Melt the unsalted butter in a saucepan or in the microwave, then pour it into the crushed biscuits and mix well. Step 4: Press the biscuit mixture into the bottom of a 23cm springform cake tin, using the back of a spoon to smooth it out. Step 5: Bake the base in the preheated oven for 10 minutes, then remove it and leave it to cool. Step 6: To make the filling, whisk the cream cheese and caster sugar together until smooth. Step 7: Crush the Maltesers into small pieces, leaving some whole for decoration. Step 8: Add the crushed Maltesers to the cream cheese mixture and stir well. Step 9: In a separate bowl, whisk the double cream until it forms stiff peaks. Step 10: Gently fold the whipped cream into the cream cheese mixture, along with the vanilla extract. Step 11: Pour the filling onto the cooled biscuit base and smooth out the top with a spatula. Step 12: Chill the cheesecake in the fridge for at least 3 hours, or overnight if possible. Step 13: Once the cheesecake is chilled, remove it from the tin and place it onto a serving plate. Step 14: For the topping, arrange the remaining Maltesers on top of the cheesecake in any pattern you like. Step 15: Your Maltesers cheesecake is now ready to serve and enjoy!Nutrition
