James Martin's Toad In The Hole Recipe
Introduction
Toad in the hole is a classic British dish that is perfect for a cozy night in. It consists of sausages cooked in a batter and served with onion gravy. In this recipe, we will be following James Martin's version of Toad in the Hole. For the batter:- 125g plain flour
- 2 eggs
- 150ml milk
- 1 tsp wholegrain mustard
- Salt and pepper to taste
- 8 good-quality sausages
- 1 onion, sliced
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 tsp tomato puree
- 1 tsp sugar
- 300ml beef stock
- Salt and pepper to taste
Instructions
Making the Batter
1. Start by making the batter. Mix together the flour, eggs, milk, wholegrain mustard, salt, and pepper in a bowl until smooth. 2. Leave the batter to rest for at least 30 minutes.Cooking the Sausages and Onion
1. Preheat your oven to 220°C (200°C fan)/425°F/gas mark 7. 2. Place the sausages in a roasting tin and drizzle with olive oil. 3. Bake the sausages in the oven for 15 minutes. 4. Add the sliced onion to the tin and bake for a further 10 minutes.Making the Gravy
1. While the sausages and onion are cooking, make the gravy. 2. Heat the olive oil in a pan and add the chopped onion and garlic. 3. Cook until the onion is soft and translucent. 4. Add the tomato puree and sugar and cook for 1 minute. 5. Pour in the beef stock and simmer until the gravy has thickened. 6. Season with salt and pepper to taste.Cooking the Toad in the Hole
