Instructions
1. Preheat your oven to 200C/180C fan/gas 6. 2. To make the pastry, combine the flour, ground almonds, and icing sugar in a large bowl. Add the cubed butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs. 3. Add the beaten egg and 1 tablespoon of cold water and mix until the dough comes together. If it's still too dry, add another tablespoon of water. 4. Roll the pastry out on a floured surface to a thickness of about 3mm. Cut out 12 circles using a 9cm cutter and place them in a 12-hole muffin tin. 5. To make the filling, mix together all of the ingredients in a bowl. 6. Spoon the filling into the pastry cases, filling each one about 2/3 full. 7. Roll out the remaining pastry and cut out 12 slightly smaller circles using an 8cm cutter. Place a pastry lid on top of each mince pie and press the edges together to seal. 8. Brush the tops of the pies with beaten egg and make a small hole in the center of each one with a sharp knife. 9. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown. 10. Remove from the oven and leave to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. 11. Dust with icing sugar before serving.
