This beef stew recipe is perfect for those cold winter nights. It’s easy to make and full of flavour.Ingredients
- 1kg stewing beef
- 2 onions, chopped
- 4 garlic cloves, minced
- 4 carrots, chopped
- 4 celery stalks, chopped
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp salt
- 1 tsp black pepper
- 500ml beef stock
- 500ml red wine
Instructions
- Season the beef with salt and pepper and brown in a pan.
- Add the onions and garlic and cook for a few minutes until softened.
- Add the carrots and celery and cook for a further 5 minutes.
- Transfer everything to the slow cooker.
- Add the tomato paste, Worcestershire sauce, bay leaves, thyme, rosemary, beef stock and red wine.
- Cover and cook on low for 8 hours.
- Remove the bay leaves and serve with crusty bread or mashed potatoes.

Instructions

- Add the coconut milk, chopped tomatoes and tomato paste.
- Cover and cook on low for 6 hours.
- Remove the chicken from the slow cooker and shred the meat.
- Return the meat to the slow cooker and stir to combine.
- Serve with rice or naan bread.

- Add the carrots and cook for a further 5 minutes.
- Add the ras el hanout, cinnamon, cumin, coriander, salt and pepper and cook for a further minute.
- Transfer everything to the slow cooker.
- Add the chicken stock, chickpeas and apricots.
- Cover and cook on low for 8 hours.
- Toast the almonds in a dry pan.
- Serve the tagine with the toasted almonds and couscous or flatbread.
