- 5 cloves of garlic
- 2 shallots
- 1 stalk of lemongrass
- 1 thumb-sized piece of galangal
- 1 teaspoon of shrimp paste
- 1 tablespoon of coriander seeds
- 1 teaspoon of cumin seeds
- 1 teaspoon of salt
- 1 tablespoon of vegetable oil
- 1 pound of chicken breast, cut into bite-sized pieces
- 1 can of coconut milk
- 1 cup of chicken stock
- 1 tablespoon of fish sauce
- 1 tablespoon of palm sugar
- 1 cup of Thai basil leaves
- 1 cup of sliced bamboo shoots
- 1 red bell pepper, sliced
- 1 tablespoon of vegetable oil
Instructions
Step 1: Make the green curry paste
1. Roughly chop the chilies, garlic, and shallots. 2. Peel off the tough outer layers of the lemongrass and finely chop the white part. 3. Peel the galangal and slice it thinly. 4. In a small pan, dry roast the coriander seeds and cumin seeds until fragrant. 5. In a mortar and pestle, pound the chilies, garlic, shallots, lemongrass, galangal, shrimp paste, coriander seeds, cumin seeds, and salt until you get a smooth paste. 6. Heat the vegetable oil in a pan and fry the green curry paste over medium heat for 2-3 minutes until fragrant.Step 2: Cook the curry
