Instructions

1. Preheat the oven to 200°C/180°C fan/gas mark 6. 2. Heat a large non-stick frying pan over a high heat and add the beef mince. Cook for 5-6 minutes, stirring occasionally, until browned. 3. Add the onion and garlic to the pan and cook for a further 2-3 minutes until softened. 4. Add the carrots, celery, and mushrooms to the pan and cook for 5-6 minutes until softened. 5. Add the chopped tomatoes, tomato puree, beef stock, Worcestershire sauce, and thyme to the pan. Bring to the boil, then reduce the heat and simmer for 15-20 minutes until the sauce has thickened. 6. Season with salt and pepper, to taste. 7. Meanwhile, boil the potatoes in a large pan of salted water for 15-20 minutes until tender. 8. Drain the potatoes and mash with the low-fat spread and yogurt until smooth. Season with salt and pepper, to taste. 9. Spoon the beef mixture into a large ovenproof dish and spread the mashed potato on top. Use a fork to create a pattern on the surface. 10. Bake in the oven for 30-35 minutes until the top is golden brown and the filling is piping hot.
