Persian Stuffed Peppers Recipe

- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup tomato paste
- 1/2 cup water
- 6 large bell peppers (red, yellow or green)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F. 2. Cut off the tops of the bell peppers and remove the seeds and membranes. 3. In a large bowl, mix together the ground beef, cooked rice, onion, parsley, mint, salt, black pepper, cumin, cinnamon, nutmeg, tomato paste, and water. 4. Stuff the mixture into the bell peppers, pressing it down firmly. 5. Place the stuffed peppers in a baking dish and drizzle with olive oil. Season with salt and black pepper. 6. Cover the dish with foil and bake for 45 minutes. 7. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the filling is cooked through. 8.
