- 1 turkey crown (3-4 kg)

- 1 tbsp of olive oil

Preparing the Turkey Crown
Before cooking the turkey crown, it is important to prepare it properly. Remove the turkey from the fridge and leave it at room temperature for at least an hour. Preheat the oven to 180°C/350°F/Gas 4.
Using a sharp knife, remove any excess fat and skin from the turkey crown. Season the turkey crown with salt and black pepper, rubbing it into the skin and under the skin.
Stuffing the Turkey Crown
Stuffing the turkey crown is optional, but it adds flavor and moisture to the meat. In a bowl, mix together onion, carrots, celery, garlic, bay leaves, rosemary, and thyme.

Cooking the Turkey Crown

Remove the foil and cook for a further 30 minutes until the skin is crispy and the internal temperature of the turkey crown has reached 70°C/160°F.
Remove the turkey crown from the oven and let it rest for 30 minutes before carving.
Gravy
To make the gravy, strain the juices from the roasting pan into a saucepan. Bring it to a boil and let it reduce by half. Mix the cornflour and water in a small bowl and add it to the saucepan. Cook for a further 5 minutes, stirring constantly, until the gravy thickens.
