Instructions
Step 1: Prepare the beef
Remove the beef fillet from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat the oven to 400°F. Season the beef generously with salt and pepper. Heat the olive oil and butter in a large skillet over high heat until hot. Add the beef and sear on all sides until browned, about 2-3 minutes per side. Transfer the beef to a plate and set aside.Step 2: Prepare the mushroom duxelles
Add the mushrooms, shallots, garlic, and thyme to the same skillet used to cook the beef.
