- 2 tbsp. vegetable oil
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp. ginger, grated
- 2 tomatoes, chopped
- 1 tsp. cumin powder
- 1 tsp. coriander powder
- 1 tsp. turmeric powder
- 1 tsp. chili powder
- 1 tsp. garam masala
- 1 cup coconut milk
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
1. Heat the vegetable oil in a large pan over medium heat. 2. Add the onion and cook for 5-6 minutes until softened. 3. Add the garlic and ginger and cook for 1-2 minutes until fragrant. 4. Add the tomatoes and cook for 5-6 minutes until they have broken down and become a paste. 5. Add the cumin powder, coriander powder, turmeric powder, chili powder, and garam masala. Cook for 1-2 minutes until fragrant. 6. Add the prawns and stir well to coat them in the spice mixture. 7. Pour in the coconut milk and bring to a simmer. 8. Reduce the heat to low and let the curry cook for 10-12 minutes until the prawns are cooked through and the sauce has thickened. 9. Season with salt to taste. 10.
