For the crust:- 9 tablespoons unsalted butter, room temperature, divided
- 5 1/2 tablespoons granulated sugar, divided
- 2 tablespoons brown sugar
- 1 large egg
- 3/4 cup plus 2 tablespoons all-purpose flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- Nonstick vegetable oil spray
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 tablespoon nonfat dry milk powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted, cooled slightly
- 6 1/2 tablespoons heavy whipping cream
- 4 large egg yolks
- 1 teaspoon pure vanilla extract
- Powdered sugar (for dusting)
Instructions
1. Start by making the crust. Preheat the oven to 350°F (175°C). 2. In a medium bowl, beat 6 tablespoons of butter, 4 tablespoons of granulated sugar, and brown sugar together until light and fluffy. 3. Add the egg and beat until pale and fluffy. 4. Add the flour, baking powder, baking soda, and salt and beat until well blended. 5. Transfer the mixture to a 9-inch-diameter glass pie dish. 6. Using your fingers, press the mixture evenly onto the bottom and up the sides of the dish. 7. Spray a sheet of foil with nonstick spray and place it, sprayed side down, onto the crust. 8. Bake the crust for 10 minutes. 9. Remove the foil and bake until the crust is golden, about 5-10 minutes longer. 10. Cool the crust completely on a wire rack. 11. To make the filling, whisk both sugars, milk powder, and salt together in a medium bowl. 12. Add the melted butter and whisk until blended. 13. Add the cream, egg yolks, and vanilla and whisk until well combined. 14. Pour the filling into the cooled crust. 15. Bake the pie for 30 minutes. 16. Reduce the oven temperature to 325°F (160°C) and continue baking until the filling is set around edges but still slightly jiggly in center, about 20-25 minutes longer. 17. Cool the pie completely on a wire rack. 18. Chill uncovered overnight. 19. Sift powdered sugar lightly over top of pie. 20. Cut the pie into wedges and serve.Nutrition
