For the crust:- 250g digestive biscuits
- 125g unsalted butter, melted
- 500g cream cheese, softened
- 200g caster sugar
- 1 tsp vanilla extract
- 4 large eggs, at room temperature
- 150g Maltesers, roughly chopped
- 200g milk chocolate, chopped
- 100g double cream
- 50g Maltesers, roughly chopped
Instructions
1. Preheat your oven to 180°C/160°C fan/gas mark 4. 2. Crush the digestive biscuits until they resemble fine crumbs. 3. Pour the melted butter over the crumbs and mix until well combined. 4. Press the biscuit mixture into the base of a 23cm springform tin, making sure it is even. 5. Bake the crust for 10 minutes or until lightly golden. 6. In a large mixing bowl, beat the cream cheese until smooth. 7. Add the caster sugar and vanilla extract, and beat again until combined. 8. Add the eggs, one at a time, beating well after each addition. 9. Fold in the chopped Maltesers. 10. Pour the cheesecake mixture over the biscuit base and smooth the surface with a spatula. 11. Bake for 50-60 minutes or until the cheesecake is just set. 12. Allow the cheesecake to cool to room temperature. 13. In a heatproof bowl, melt the milk chocolate and double cream over a bain-marie. 14. Once melted and combined, pour the chocolate mixture over the cheesecake and spread it out evenly. 15. Sprinkle the chopped Maltesers over the top of the chocolate. 16. Allow the chocolate to set before slicing and serving.Nutrition
