- 2 onions, peeled and halved
- 2 carrots, peeled and roughly chopped
- 2 celery sticks, roughly chopped
- 2 bay leaves
- 1 tsp black peppercorns
- 1 tsp whole cloves
- 2 tbsp dark brown sugar
- 2 tbsp honey
- 2 tbsp wholegrain mustard

Step 1:
Preheat the oven to 180°C.Step 2:
Place the gammon joint in a large pot and cover with cold water. Add the onions, carrots, celery, bay leaves, peppercorns, and cloves. Bring the water to a boil and then reduce the heat to a simmer. Cover the pot and cook for 2 hours, or until the gammon is cooked through.Step 3:
