Cullen Skink Recipe
Introduction

Follow these simple steps to make Cullen Skink:- Place the smoked haddock in a large pot with 2 cups of water. Bring to a boil and then reduce the heat to low. Simmer for 10-15 minutes or until the fish is cooked through.
- Remove the fish from the pot and set aside to cool. Reserve the cooking liquid.
- In a separate pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the chopped potatoes to the pot with the onions and sauté for an additional 5 minutes.
- Strain the cooking liquid from the smoked haddock and add it to the pot with the potatoes and onions. Bring to a boil and then reduce the heat to low. Simmer for 10-15 minutes or until the potatoes are cooked through.
- While the potatoes are cooking, remove the skin and any bones from the smoked haddock and flake the fish into small pieces.
- Once the potatoes are cooked, add the flaked smoked haddock to the pot and stir to combine.
- Add 2 cups of milk or cream to the pot and stir to combine. Heat until the soup is hot but not boiling.
- Season the soup with salt and pepper to taste.
- Serve hot with crusty bread or crackers.
