Delicious Pastelon Recipe: A Taste Of Latin America

For this recipe, you will need the following ingredients:- 3 ripe plantains
- 1 1/2 pounds of ground beef
- 1 red pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced

- 1 teaspoon of ground cumin
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of salt
- 1/4 cup of raisins
- 1/4 cup of green olives
- 1/4 cup of capers
- 1/4 cup of milk
- 2 eggs
- 1/2 cup of shredded mozzarella cheese
Instructions
1. Preheat your oven to 350°F. 2. Peel the plantains and slice them into 1/4 inch rounds. 3. In a large skillet, heat the olive oil over medium heat. 4. Add the ground beef to the skillet and cook until browned. 5. Add the red pepper, onion, garlic, tomato paste, cumin, oregano, black pepper, and salt to the skillet. Cook until the vegetables are softened. 6. Stir in the raisins, olives, and capers. 7. In a separate bowl, whisk together the milk and eggs. 8. Grease a 9x9 inch baking dish with cooking spray. 9. Arrange a layer of plantains on the bottom of the dish. 10. Spread half of the beef mixture on top of the plantains. 11. Add another layer of plantains on top of the beef mixture. 12. Spread the remaining beef mixture on top of the second layer of plantains. 13. Add a final layer of plantains on top of the beef mixture. 14. Pour the egg mixture over the top of the plantains. 15. Sprinkle the shredded mozzarella cheese on top of the egg mixture. 16. Cover the baking dish with foil and bake for 30 minutes. 17.
