Spicy Couscous Recipe

For this recipe, you will need:- 1 cup couscous
- 1 ½ cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- Salt and pepper to taste
- Cilantro for garnish (optional)
Instructions
1. Start by heating the olive oil in a large skillet over medium heat. 2. Add the diced onion and garlic to the skillet and sauté for about 5 minutes or until the onion is translucent. 3. Add the diced red bell pepper to the skillet and sauté for another 5 minutes or until the pepper is tender. 4. Add the ground cumin, ground coriander, paprika, and cayenne pepper to the skillet and stir to combine. 5. Add the can of diced tomatoes (including the juice) to the skillet and stir to combine. 6. Bring the mixture to a simmer and let it cook for about 5 minutes. 7. Add the can of drained and rinsed chickpeas to the skillet and stir to combine. 8. Season the mixture with salt and pepper to taste. 9. Add the 1 ½ cups of vegetable broth to the skillet and bring it to a boil. 10. Once the broth is boiling, add the 1 cup of couscous to the skillet and stir to combine. 11. Cover the skillet with a lid and remove it from the heat. 12. Let the couscous sit for about 5 minutes or until all the liquid has been absorbed. 13. Fluff the couscous with a fork. 14. Transfer the couscous to a serving dish. 15.
